Dinner in the Garden

This week, I joined The Wedding Cafe's Luke and Lauren Williams to check out Mari's Garden, an aquaponic farm where chef Elmer Guzman of The Poke Stop and Chef Elmer's Island Cuisine gets the freshest ingredients to create his forward thinking dishes. We first did a tour of the Mari's Garden aquaponic farm where Brenden Lau explained to us how they grow Manoa lettuce without the use of soil, and use water in sustainable ways to raise produce and also fish which they sell to businesses. The system they showed us is brilliant, take my word for it.

Afterwards, I sat down for dinner with Luke and Lauren, and Tristan Lobendahn of Island Cuisine for a really special meal brought to us by Chef Elmer himself, with wine parings by sommelier, Danny Matsushita. The menu included 4 courses:
